A little of this and that…and dinner was served. I happened to have a jar of leftover pizza sauce on hand, making sauce is easy as well. A quick dinner and very tasty. And toddler approved….
Pizza Veggie Quinoa
Ingredients:
- 1 cup quinoa
- 2 cups water
- ¼ tsp kosher salt
- 1 Tbsp olive oil
- 1 onion, peeled and chopped
- 14 ounces frozen bell pepper strips, chopped (about 3 cups)
- 2 small zucchini, chopped
- 2 tsp garlic, minced (4 cloves)
- ¾ cup pizza sauce
- ¼ tsp ground black pepper
- ½ cup grated Parmesan cheese
Directions:
Rinse the quinoa well, shake the water off. Add it, the water and salt to a medium saucepan, bring to a boil. Turn down to medium-low, cover and let cook for 20 minutes.
Meanwhile heat the oil in a large skillet over medium-high, add the onion, peppers, zucchini and garlic, sauté until crisp. Turn down to medium-low, add the pizza sauce and ground pepper, toss gently. Turn off the heat and stir in the quinoa, gently stirring to coat. Add in the Parmesan cheese and serve.
Serves 3 to 4.
