Alton Brown’s Marshmallows

Lets just say this: Y-U-M!
Sure, making marshmallows is time consuming and isn’t cheap. I have made maple syrup marshmallows before and I knew that homemade ones taste better than any other ones, even expensive ’boutique’ ones. For me a bigger issue lies in that nearly all commercial made marshmallows have artificial dye added to them. I cannot eat fake dyes so it is a rare treat to be able to buy ones. The last ones I found cost me nearly $5 for 16 tiny marshmallows.

So I thought I would give the Alton Brown ‘Good Eats’ recipe a try. I usually avoid corn syrup but figured I’d let it slide for once 😉 We had watched the marshmallow episode a couple weeks ago and I finally had time this morning.

Marshmallows are one of the easiest candies to make – really, I would say they are the perfect candy to start with. For tools you need a stand mixer, parchment paper, cookie tray, spatula, heavy pot and candy thermometer…and a couple hours of time to play with.

While Alton’s recipe doesn’t mention it, lining the tray with parchment paper (prepare it same as you would the pan in the recipe) allows you to remove the 9×13 block of marshmallow. I used a pizza cutter to cut mine up, then tossed the pieces liberally in more powdered sugar. Once prepped, I have stashed them into air tight containers.
