I had seen a recipe for a caramel apple oatmeal online and had to try it! I did though cut the sugar in half and added buts….so a typical adapted recipe!
I was pleasantly surprised to see that Trader Joe’s carries two of Earth Balance’s products recently – the whipped and the regular tubs. And for a very reasonable price (about half the price of our local grocery store!)
Caramel Apple Pecan Oatmeal
Ingredients:
- 2 Tbsp Earth Balance Organic Whipped Spread
- ¼ cup dark brown sugar, packed
- 3 Gala apples, peeled, cored and chopped
- 1 tsp ground cinnamon
- 3 cups unsweetened almond milk
- 1½ cups old-fashioned oats
- ¼ cup finely chopped raw pecans
Directions:
In a large heavy saucepan, melt the spread and sugar over medium-low, add in the apples and cinnamon and cook for 15 to 20 minutes, stirring often. You want the apples to be fork tender and the sauce thick and smelling awesome. Pour the apples and sauce into a heat safe mixing bowl, set aside.
Add the milk and oats to the pan,turn up to high and bring to a boil. Turn down to medium-low and cook for five minutes, stirring often.
Take off the heat and stir in most of the apple mixture, reserving some for topping. Stir in the pecans.
Divide between 3 bowls, sprinkle a little more brown sugar on top and then with the reserved apples.

Wow! That looks apple-y cinnamon-y delicious! I wish I had apples right now so I could have it for breakfast.
Mmm, that looks good! Could you substitute butter for the spread? I can’t usually eat those spreads. 🙁

Yep! The recipe I adapted it from used unsalted butter. Btw…you should check out the entire line of Earth Balance though – they have a soy free one as well.
