A dinner to celebrate our kitchen remodel this summer…being more than half done. I have a stove now that actually works, and bakes correctly. So to celebrate I made a large batch of zucchini boats! A quick dinner, that preps fast and bakes while you do other things.
Zucchini Boats
Ingredients:
- 4 good-sized zucchini
- 1 pound lean ground beef
- 1 sweet onions, chopped
- 2 cups pasta sauce
- 8 cheese sticks, roughly chopped
Directions:
Preheat oven to 400°. Wash and dry zucchini. Cut in half, lengthwise, leaving tops on. Gently scrape out the interior flesh, leaving a hollow boat. Reserve the scraped out flesh.
Place the boats cut side up on 2 rimmed non-stick baking sheets. Bake for 10 minutes.
Meanwhile, saute the beef, onion and reserved flesh over medium-high until beef is cooked, and any liquid has evaporated.
Stir in the pasta sauce, heat till bubbling. Pull off the stove.
Fill the boats with beef mixture, sprinkle cheese over the top.
Bake for 20 to 25 minutes, until cheese is turning golden.
Let rest for 5 minutes, then serve.
Serves 4 to 8, depending on appetite.
