Had a sweet tooth today on a really cold/wet/gray day. Played with a recipe to see if I could lower the fat and it worked great! I swapped out the butter called for and instead used low fat cream cheese. Don’t use non fat though, it doesn’t bake well.
Double Cream Cheese Danish
Ingredients:
Cream cheese filling:
3-ounces low fat cream cheese
1 Tbsp sugar
1 Tbsp non fat milk
Danish dough:
2 cups Bisquick® Heart Smart baking mix (or similar)
1/4 cup (2 ounces) low fat cream cheese
2 Tbsp sugar
2/3 cup non fat milk
1 tsp pure vanilla extract
Vanilla glaze:
3/4 cup powdered sugar
1 Tbsp warm water
1/4 tsp pure vanilla extract
Directions:
Heat oven to 450°F. Lightly grease a cookie sheet with cooking spray. In a small bowl mix filling ingredients until smooth with a whisk, set aside.
In a medium bowl, stir baking mix, cream cheese and sugar until crumbly with a fork or your fingers. Stir in milk until dough forms with a wooden spoon; beat for 15 strokes or until a smooth dough.
On the sheet, drop dough by tablespoonfuls about 2 inches apart. Spray the back of a teaspoon lightly with baking spray, make a shallow well in center of each with back of spoon; repeat as needed to keep from sticking to dough. Fill each with about 1 teaspoon filling.
Bake 10 minutes or until golden brown and smelling awesome.
While they are baking, mix the glaze ingredients in a small bowl until smooth and thin enough to drizzle.
When the danish are done, drizzle the glaze over them with a spoon.
Store left overs tightly covered in the refrigerator.
