Dried apricots are often intensively sweet, if you purchase organic ones without sulfur, they tend to be a lot less sweet. They add a great texture to a bowl of morning oats. Stock up on gluten-free rolled oats, and be a few minutes from a nourishing bowl of warm oats.
Apricot Hempseed Oatmeal
Ingredients:
- 4 cups unsweetened coconut milk beverage
- 2 cups gluten-free rolled oats
- 2 Tbsp coconut sugar
- 12 organic unsulfered dried apricots, diced
- 1 tsp ground cinnamon
- ½ tsp fine sea salt
- ¼ cup hemp seeds
Directions:
Bring the coconut milk, oats, sugar, apricots, cinnamon, and sea salt to boil in a large saucepan. Reduce heat to medium, cook for 5 minutes, stirring often.
Take off the heat, dish up and top with hemp seeds.
Makes 3 to 4 servings.
