Most mornings I make stovetop oatmeal for Kirk, and if in the mood, I make it for me as well. It’s quick, nourishing and good for the body and soul. It’s an adaptable recipe, and should you not have fresh fruit or berries, add in dried fruit as you cook it. Fall is here, and it’s time to savor the cold mornings.
Stovetop Oatmeal
Ingredients:
- 1 cup rolled oats
- 1 tsp ground cinnamon
- 2 cups unsweetened coconut milk beverage
- 2 Tbsp pure maple syrup
- 2 Tbsp Sunbutter
- Fresh fruit or berries
Directions:
Add the oats, cinnamon, coconut milk, maple syrup, and Sunbutter in a saucepan.
Bring to a boil over high, turn down to medium heat, and let simmer for five minutes, stirring often.
Top with fresh fruit and serve.
Serves 2.
Notes:
Any non-dairy unsweetened milk works. Dairy milk will boil over quickly, so keep an eye on it.
Use any nut or seed butter as desired.
