It’s late July and that means for us, the many tomato plants are finally starting to ripen. And next to the beds, is all my basil. Summer time is easy meals full of flavor! Although aith over 25 plants…we might be eating a lot of sauce soon 😉
That is if I don’t eat all the tomatoes right off the plants while watering 😉 The lovely color of my cream tinged basil is Pesto Basil.
No Cook Fresh Tomato Sauce
Ingredients:
- 1½ pounds fresh tomatoes, chopped
- 1/3 cup fresh basil (packed)
- 1 Tbsp olive oil
- 4 garlic cloves, chopped
Directions:
Stir together ingredients, let sit for 15 minutes. Process sauce in a mini food chopper or blender until finely chopped (a few pulses will do it). Season to taste with sea salt and ground black pepper. Let rest while you bring pasta water to boil, it needs 30 to 45 minutes for the flavors to meld.
Makes enough to dress 16 ounces cooked pasta.
