Banana Apple Streusel Muffins
Ingredients:
Streusel –
- ¼ cup granulated sugar
- 3 Tbsp white whole wheat flour
- ¼ tsp ground cinnamon
- 1 Tbsp cold unsalted butter, diced
Muffins –
- 3 bananas, very ripe, mashed
- 1 cup unsweetened applesauce
- 1½ tsp Ener-G Foods Egg Replacer + 2 Tbsp warm water (or 1 large egg)
- 2 Tbsp unsalted butter, melted
- 1½ cups white whole wheat flour
- ½ cup granulated sugar
- 2 tsp baking powder
- ¼ tsp fine sea salt
- ¼ tsp ground cinnamon
Directions:
Line a 12 count muffin tin with premium liners. Preheat oven to 375°.
In a small bowl, stir together sugar, flour, and cinnamon together for streusel. Work in butter with fingers or a fork until finely crumbed, set aside.
Add bananas, applesauce, Ener-G (mixed up), and melted butter to a medium bowl, whisk together.
In a large bowl, whisk together flour, sugar, baking powder, salt and cinnamon, add wet to dry, stir until just mixed.
Divide between muffin cups (they will be full). Sprinkle the streusel mixture on top liberally.
Bake for 23 to 25 minutes, until a toothpick comes out clean in the center. Let cool for 10 minutes before transferring to a cooling rack. Store covered once cooled.
Makes 12 muffins.
