For breakfast this morning:
Pumpkin Chia Oatmeal
Ingredients:
- 2 cups unsweetened almond milk
- 1 cup old-fashioned oats
- ½ cup canned pumpkin purée (organic preferably)
- ¼ cup pure maple syrup
- ¼ cup raisins (preferably organic)
- ½ tsp ground cinnamon
- ½ tsp ground cardamom
- 2 Tbsp natural style peanut butter or nut butter
- 2 Tbsp chia seed, ground finely (preferably organic)
- Brown sugar for topping, if desired
Directions:
Bring everything but the peanut butter and chia seed to a boil in a heavy medium saucepan. Turn to medium-low and cook for 5 minutes, stirring often. Take off the heat, stir in the butter till melted in and then add the chia, stirring in. Dish up into two bowls and serve.
Serves 2.
