Easy to make and awesome with some crunchy chips!
Corn Salsa
Ingredients:
- 1 cup frozen corn
- 1 good-sized jalapeño pepper, trimmed, seeded and diced
- 2 Tbsp shallot, peeled and diced (about 1 average)
- 2 Tbsp fresh cilantro leaves, finely chopped
- 2 Tbsp lime juice (fresh or bottled)
- 1 Tbsp extra virgin olive oil
- ½ tsp sugar
- Salt to taste
Directions:
Mix everything in a small bowl, add salt to taste, if desired. Let chill for a couple of hours in the refrigerator (if using frozen and not thawed corn it will take a bit longer to be ready.)
