Cranberry Maple Oatmeal

Kirk and I have been having variations of this simple and quick oatmeal for breakfast the past couple days.

Cranberry Maple Oatmeal

Ingredients:

2 cups light vanilla soy milk

1 cup old-fashioned oats

1/4 cup dried cranberries

1/4 cup pure maple syrup or maple sugar

1 tsp ground cinnamon

Directions:

Combine everything in a medium saucepan, bring to a boil. Lower to medium low and cook for 5 minutes, stirring often.

Serves 2.

Notes: I have found if you increase the milk to 2 1/2 cups you will get a creamier oatmeal where the oats break down more.
