This morning’s oatmeal features crunchy apples, raisins and cinnamon. I used a Honeycrisp apple, which are a snappy and crisp apple, large for its weight.
Apple Oatmeal
Ingredients:
2 cups light vanilla soy milk
1 tsp ground cinnamon
2 tsp packed brown sugar
2 Tbsp pure maple syrup
2 Tbsp raisins
1 cup old-fashioned oats
1 large apple, peeled, cored and diced (about 2 cups)
Directions:
In a large saucepan combine the milk, cinnamon, sugar, maple syrup and raisins, bring to a boil and add in the oats. Turn to medium low and cook for 5 minutes, stirring often. Take off the heat and stir in the apple.
Serves 2, each serving is 1 1/2 cups.
