Another option of on-the-stove-top oatmeal this one is made with water versus milk. I think if I were to make it again I would use dairy or soy milk though. It seems to give a creamier and richer tasting oatmeal.
I picked up the blueberries and the nuts at Trader Joe’s, they are usually my first choice as they have a wide range at realistic prices.
Blueberry Oatmeal
Ingredients:
3 1/2 cups water
2 cups old fashioned oats
1/2 cup dried wild blueberries
Pinch of kosher salt
1 tsp pure vanilla extract
1/4 cup blueberry fruit spread or jam
3 Tbsp finely chopped candied pecans
Directions:
Bring the water to a boil in a medium saucepan. Add in the oats, berries and salt, lower the heat to medium low and let cook for 5 minutes, stirring often.
Take off the heat and stir in the vanilla and fruit spread till mixed well. Serve topped with the nuts.
– For those not watching sodium you may want to add up to 1/4 tsp kosher salt, we used about 1/8 tsp. You may also wish to add milk to your oats at the end.
Serves 3, 1 1/3 cups each.
