I was feeling pretty stumped last night about what to make for dinner when I got an idea. I had a 4 pack of frozen bison burgers in the freezer (from Trader Joe’s) and a couple sweet onions. Plus a big sack of Yukon Gold potatoes I picked up there as well. So by playing with a couple recipes I came up with this recipe – which I might add you can use frozen burgers, no thawing needed.
Bison Burger Salisbury Steak
Ingredients:
2 Tbsp olive oil
4 bison burgers (1 lb. total)
2 medium sweet onions, peeled, halved and thinly sliced
1/2 tsp sugar
1 Tbsp fresh garlic, minced
2 Tbsp all-purpose flour
2 cups lower sodium beef broth
1/4 cup ketchup
1 Tbsp Worcestershire sauce
1/2 tsp dried Thyme, crumbled
1/2 tsp freshly ground black pepper
Directions:
In a large non stick skillet, heat the oil over medium high heat. Add in the burgers and cook for 3 to 4 minutes on each side. Take out of the pan and put on a plate, cover with foil tightly.
Add the onions and sugar to the skillet, drop the heat to medium and cook for 5 minutes, stirring often. In the last-minute, add in the garlic to cook. Shake the flour on top and continue cooking for another minute or two, stirring often.
Whisk the beef broth, ketchup and spices together and add in. Stir often till the sauce starts bubbling, add in the burgers and cover tightly. Lower the heat to medium low and cook gently simmering for 10 minutes.
Test for seasoning and add more pepper and salt if desired.
Serve the gravy over hot mashed potatoes and also on the burgers.
