Trader Joe’s is one those places that if you don’t have you don’t know what you are missing. Over the years I have become a rabid fan due to the fun things I pick up. They often carry quick bread mixes for under $3 in various flavors. In fall pumpkin shows, along with this year a dark gingerbread and an apple bread. Of course, with anything at Trader Joe’s you best load up if it sounds good because you never know if it will be there even a week later.
They are easy to use, usually calling for water, oil (or butter) and eggs. You can play with the fat content easily and make them healthier. For the pumpkin I used the water and eggs called for (you must have some fat for it to still taste right, at least that is my theory) but instead of the 1/2 cup vegetable oil I used 1/2 cup pumpkin puree. Nothing like double the flavor, eh? I then added in 1/2 cup or so of chopped up fresh cranberries. I followed the baking directions for muffins and 20 minutes later out popped 12 tasty golden brown (or maybe golden orange?) muffins that I drizzled a simple glaze over:
Simple Glaze
Ingredients:
1/2 cup powdered sugar
1/2 tsp pure vanilla extract
2 1/2 tsp low fat milk
Directions:
Mix together till smooth, then drizzle over the warm muffins with a fork.
