The cold wet weather that rolled in last night just sighed to me that I should bake today. And that warm banana bread sounded perfect!
A warm slice, just out of the oven, topped with whipped cream cheese:
Banana Applesauce Quick Bread
Ingredients:
4 ripe bananas
1 cup white sugar
1/2 cup unsweetened applesauce
1 tsp pure vanilla extract
2 large eggs
1 tsp baking soda
1 Tbsp baking powder
1 tsp kosher salt
2 cups all purpose flour
Directions:
Preheat oven to 350° and lightly oil a 9×5″ oven safe loaf pan.
Peel bananas and put into a large bowl, mash with a hand electric mixer. Beat in the sugar and let sit for a few minutes.
Add the applesauce, eggs and vanilla, beat well. Add in dry ingredients and mix till just blended.
Pour into pan and set pan on a cookie tray. Bake for 45 minutes and start checking until butter knife inserted in center comes out clean. It took my bread 1 hour 10 minutes total time.
Remove from oven and let sit 10 minutes before removing from pan, let cool on wire rack. Store leftovers in refrigerator.
Makes one loaf.
