Easy Bacon Spaghetti

I had a craving for simple pasta last week and was poking through the fridge and cupboards to see what I could make. I also had a couple ripe tomatoes on the vine outside calling to me….

So out of that came:

Easy Bacon Spaghetti

Ingredients:

1 lb spaghetti

4 thick pieces of bacon (high quality!)

1 large sweet onion, peeled and diced

3 small fresh tomatoes, diced

1 15-ounce can diced tomatoes

1 tsp dry Italian herbs

2 Tbsp Balsamic vinegar

1/2 cup grated Parmesan cheese

fresh black pepper to taste

Directions:

Bring a large pot of water to a boil. Cook the spaghetti for time on package or to taste. Drain quickly.

Meanwhile! In a large skillet cook the bacon till crispy, take out and set on a paper towel covered plate to drain. Add the chopped onion to the bacon grease and saute till golden. Add in the fresh tomato and herbs and stir till softening, then stir in the can of tomatoes (with juice), along with the balsamic vinegar. Lower the heat to low and let heat through.

Toss the freshly drained pasta with the cheese, then the hot sauce. Add pepper to taste and salt, if desired.

Serves 3 to 4.

Note:

So why toss the pasta with the cheese first? I saw that on Giadia’s show last week – she mentioned doing that. And you know, she was quite right – the cheese melts and wraps around the hot pasta – which grabs onto the sauce. This is something I will be ding from now on!

  1. Interesting spaghetti recipe, I can’t imagine what it is going to taste like with bacon. Thank you for the tip on tossing the pasta with the cheese first, I would not have thought of that on my own.

    My question is: what is dry Italian Herbs made up of? I don’t have that as a spice in my local grocery store.
