I came across Whole Foods recipe for a quick and easy stovetop mac and cheese through their Facebook page.
I liked the idea but changed it a bit, making it a bit more traditional.
Stovetop Mac and Cheese
Ingredients:
8-ounces dry elbow macaroni
2 Tbsp flour
1 tsp dry mustard
1 1/2 cups nonfat milk
1 cup shredded 2% milk cheddar cheese
1/4 cup shredded parmesan cheese
1/4 tsp fresh ground black pepper
1 tsp dry chives
2 sun dried tomato sausages, skinned and roughly chopped
1 Tbsp olive oil
1/2 cup frozen green peas
Directions:
Bring a large pot of water to a boil. Add macaroni and cook until al dente, or for time on package. When ready, add the peas in and then drain well.
Meanwhile, in a medium heavy pot heat the oil over medium heat. Add in the sausages and cook till browned. Sprinkle the flour/dry mustard on top, mixing in. Let cook for a minute till browned. Slowly whisk in the milk and cook till thickened. Turn off the heat and whisk in the 2 cheeses till melted. Season with the pepper, chives and salt, as desired.
Toss with the hot pasta.
Serves 3.
