I had a craving for chicken salad last night…so that was dinner! This was very quick to pull together, I made it about an hour before and let it meld the flavors.
I used candied walnuts from Trader Joe’s that had a little bit of spice added as well. For the onion, feel free to take 2 Tbsp diced dried onion and soak it with 2 Tbsp cool water for 20 minutes, then proceed (easier than chopping into a fresh onion!) The yogurt cuts the calories/fat over using mayo and doesn’t have the heavy mouth feel.
Spring Chicken Salad
Ingredients:
1 12.5-ounce can chicken breast
1 6-ounce container non fat plain yogurt
1 1/4 cups halved seedless red grapes (small size)
3/4 cup diced candied walnuts
2 Tbsp minced onion
1/4 tsp fresh ground black pepper
Rolls or bread
Directions:
Drain the chicken well, then place in a large glass bowl. Flake with a fork, add in the nuts and toss. Add the onion and pepper, then the yogurt, tossing. Fold in the grapes. If desired, salt to taste.
Cover tightly and chill for at least an hour.
Serves on rolls or bread – or on a salad of greens.
Makes about 3 cups of chicken salad.
