Slightly Healthier Gingerbread

I found this recipe in Betty Crocker’s Healthy Home Cooking: Over 400 Fast and Flavorful Recipes. I am not sure where my copy came from, maybe from my mother – but I have started trying recipes out of it to see how they turn out.

It pulled together fast and was in the oven in a couple minutes. I added some diced candied ginger in due to a craving for it. My loaf took an extra 10 minutes to bake up, check with a toothpick at the time noted, then bake longer if needed.

The bread turned out very moist and was very tasty! It was a perfect small loaf – no leftovers to tempt me.

Gingerbread

Ingredients:

1 cup all purpose flour

1/4 cup molasses

1/4 cup hot water

2 Tbsp packed dark brown sugar

2 Tbsp shortening

1 Tbsp diced candied ginger

1 egg white

1/2 tsp baking soda

1/2 tsp ground ginger

1/8 tsp kosher salt

Directions:

Heat oven to 325*. Spray a glass loaf pan with cooking spray.

Place all the ingredients in a mixing bowl. Beat at low for 30 seconds then turn up to medium and beat for 3 minutes. Be sure to scrap e the bowl often. Pour into the pan.

Bake for 35 minutes, check with a toothpick in the center. If it comes clean it is done, if not, bake for another 10 minutes.

Cool for 10 minutes then snack on.

Makes 1 small loaf.
