I have been making this recipe for a couple years now when I need a quick bowl of salsa for a dinner – and find I don’t have any on hand. Oh fine, it isn’t “gourmet” but it tastes good and is of the no-chop variety. So leave your pretentions at the table 😉
Quick Salsa
1 14-ounce can diced tomatoes, drained
1 4-ounce can diced green chile peppers
3/4 cup frozen chopped onion
3 Tbsp fresh or 1 Tbsp dried Cilantro, chopped
1 Tbsp lemon or lime juice – or 1/4 tsp True Lemon or True Lime + 1 Tbsp water
1/4 tsp diced dried garlic
3/4 tsp dried oregano
1/4 tsp fresh ground black pepper
1/4 tsp sugar
salt to taste if desired (I don’t use any)
Blend well in a bowl, cover tightly and let sit in the fridge to meld flavors. Taste after 15 minutes or so to see if it needs more seasoning. Depending on my taste that day a bit more sugar or lemon juice may be needed.
Makes roughly 2 cups salsa.
