Another busy night, so another one of my ‘what the heck is in the cupboard’ meals whipped up fast…..hence you have:
Kitchen Sink Alfredo
Dig through your frig and cupboards. Ooh….these items might work….
Bring a big pot of water to a boil. In goes a 12 ounce box of rotini pasta. Cook for time on package.
Meanwhile in a heavy medium sauce pan warm up a jarred bottle of mushroom alfredo sauce. Add in half a bag frozen corn (8 ounces), 1/4 tsp dried oregano, small can of well drained sliced olives, 1 cup or so of sour cream and a package of southwestern flavor grilled chicken strips (not breaded). Heat up and grate up a cup or so of sharp cheddar cheese.
Drain the pasta, toss with sauce and cheese and serve up with a small loaf of crusty cheese bread. Dinner is ready in under 30 minutes and I am back to work 😉
