This recipe was not as good as some of my past tries but it was still great tasting. Walker ate about 1/3 of the loaf over 2 days! He really, really loves quick breads. Lil’ Toddler has taste 😉 This bread is an easy one to pull together, especially since it has no egg substitutes in it.
Vegan Banana Bread
Ingredients:
- 2¼ cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1½ cups mashed bananas
- 6 Tbsp pure maple syrup
- 2 Tbsp canola oil
- 2 tsp pure vanilla extract
Directions:
Heat the oven 350° and spray a bread pan with cooking spray.
In a medium mixing bowl sift the dry ingredients together.
In a large mixing bowl whisk the wet ingredients together.
Add the dry to the wet and stir until just mixed.
Spread evenly into the pan and bake for 50 to 60 minutes, or until golden brown and a butter knife comes out clean.
Let cool fully before slicing, the bread tastes better when cool.
Store tightly wrapped and eat within 2 days for best results.
Makes 1 loaf.
