Simple, comforting, late season winter food. It is great as a filling for a pie or cobbler, but also over ice cream and yogurt.
Triple Apple Pie Filling
Ingredients:
- ½ cup coconut sugar, packed
- 2 Tbsp cornstarch
- ½ tsp ground cinnamon
- Pinch sea salt
- Dash ground nutmeg
- 1¼ cups apple juice
- ¼ cup dried apples, chopped or torn
- 2 cups canned apples, drained and sliced (I used 2 pint jars worth of this recipe)
Directions:
Add coconut sugar through nutmeg to a medium saucepan. Whisk in apple juice, then dried apples. Bring to a boil over medium-high heat, whisking often. Reduce heat to medium, whisk until thick.
Fold in apples, let heat through, stirring gently.
Take off heat, let cool before using. Store covered in refrigerator, if using as a topping.
Makes 3 cups filling.
