Summer Slipping Away – Ice Cold Lemonade

After looking through the lovely photographed cookbook, full of sinful treats, I oddly enough decided to try the lemonade. A late summer heat wave (yet again!) made this decision. I had no desire to make the house any hotter by turning on the oven. And sitting outside, sipping on this, was so much nicer.

Lemonade

Ice Cold Lemonade

Ingredients:

  • 1 cup water
  • ½ cup granulated sugar
  • 2 Tbsp honey
  • 12 ounces ice cubes
  • 1½ cups freshly squeezed lemon juice (8-10 medium lemons)
  • 1½ cups cold water

Directions:

Combine first water, sugar, and honey in a small saucepan over high heat and bring to a rolling boil. Remove from heat and set aside.

Add the ice cubes. Lemon juice, cold water, and warm sugar syrup to a blender. Process until completely smooth. Serve over additional ice cubes with lemon slices, if desired, as a garnish.

Notes:

I like my lemonade a bit less sweet, so I diluted mine with a bit more water and plenty of ice. It is wonderful cut 50/50 with unsweetened ice tea – a classy Arnold Palmer!
