Ooh, Organic Tortilla Soup Base from Pacific Natural Foods? I was excited to try it out – and wasn’t disappointed at all.
Just add what you crave, and dinner is on quickly. If you are way stuffed up, this stuff is a sinus-draining miracle. (Seriously. I could breathe out of my nose after!) Pacific Foods is running a contest as well, through the end of October. Mmmm….up next? A huge bowl of Pho to wallow in….cause, you know…I NEED and DESERVE to win the contest (I kid you all!)
Black Bean Tortilla Soup
Ingredients:
- 1 Tbsp olive oil
- 1 large sweet onion, chopped
- 1 container Pacific Tortilla Soup Base
- 1 15-ounce can organic black beans, drained
- 1 cup sweet corn, frozen
- 1 14 to 15-ounce can crushed tomatoes
- ½ fresh lime, juiced
Serve with:
- Lime wedges
- 1 ripe avocado, cubed
- Finely shredded cheddar or mexi-cheese
- organic sour cream
- 1 package tortilla strips
Directions:
Heat a large saucepan over medium, add oil and onion, saute until onion is tender and turning golden. Stir in soup base, beans, corn and tomatoes. Bring to a simmer. Once piping hot, add in lime juice and take off heat.
To serve, ladle into bowls, top as desired.
Serves 4
