We had these for a quick-lunch, Kirk had an early gym workout and was craving protein. So I pulled out a can of my emergency stash of meat and made us chicken sandwiches. The broccoli slaw gives a great crunch!For the low-fat ranch dressing I used one I find at Safeway in the produce department that is yogurt based.
And after a week of vegetarian meals it was a treat to have a meat based meal.
Chicken Cherry Salad Sammies
Ingredients:
- 12 to 13 ounce can chicken breast, drained
- 1 cup broccoli slaw mix
- ¼ cup Dried Cherries
- 1/3 cup or to taste low-fat ranch dressing
- 4 slices Dave’s Killer Bread (or favorite bread with seeds and yumminess)
Directions:
Flake the chicken into small shreds in a mixing bowl, add the remaining ingredients and stir well. Chill for 30 minutes and then divide between two pieces bread, pressing down on the mixture to pack it a bit. Top with the remaining bread and cut in half.
Serves 2.
