I tried a new variation this morning of our usual one-pot oatmeal and added in some flaxseed meal. Wow, what a difference – it thickens up the oatmeal considerably! But delicious and hearty. And the flaxseed meal adds in so much nutrition!
Flax Oatmeal
Ingredients:
- 3 cups vanilla almond milk (or soy/rice/coconut/etc)
- 1 single serving tub organic applesauce, unsweetened
- 1 ½ cups old-fashioned oats
- ½ cup organic raisins
- ¼ cup brown sugar, packed
- 2 Tbsp flaxseed meal
- 1 tsp ground cinnamon
Directions:
In a heavy medium saucepan add everything and stir till mixed. Bring to a boil, turn down to medium-low and cook for 5 minutes, stirring often. Serve with additional brown sugar if desired.
Serves 3.
