I found this recipe in Bob Greene’s The Best Life Diet Cookbook: More than 175 Delicious, Convenient, Family-Friendly Recipes
book that came out this past December. Kirk had found it for me at Costco and at around $14 he figured I might find some fun recipes to try.
So with a sweet tooth tonight I went flipping through the dessert section. Most of the desserts are fruit based (yay!) and all are quite healthy. The little Chocolate Cakes caught my eye. Quick one bowl, fast baking and I had everything on hand. So off to the kitchen I went. I doubled the recipe as I wanted enough for Ford’s lunches this week. I tweaked the writing of the recipe to how I cook as well. They are very tasty, light and moist!
Otherwise, the original recipe on page 217 would be perfect for an after-dinner dessert for a family.
Little Chocolate Cakes
Ingredients:
1 cup unbleached all-purpose flour
1/2 cup sugar
1/8 tsp kosher salt
1 tsp baking soda
1/4 cup vegetable oil
1/4 cup unsweetened cocoa powder
1 tsp vanilla extract
2 tsp white vinegar
1 cup water
Directions:
Heat the oven to 350*.
Combine all the ingredients in a mixing bowl. Use a whisk and gently beat for a minute or until the lumps disapear.
Pour the batter into a nonstick muffin pan, evenly between all 12 cups.
Bake for about 20 minutes, or until a toothpick comes out clean.
Pop the cakes out and cool on a wire rack.
